Heavenly Roasted Chicken and Veggies

Ingredients:
4 chicken breast fillets, or 6 thighs, whatever you prefer

Marinade:
  • 1 tablespoon olive oil
  • 1/2 teaspoon basil
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 3 cloves garlic or garlic from a jar
  • 1 tablespoon Dijon mustard
  • 3 tablespoons honey
  • Red potatoes or your choice
  • 1 bag broccoli florets
Preparation:
The key is in the marinade! Mix marinade and pour half in a ZiplocĀ® bag with chicken. Set aside while you prepare veggies on a cookie sheet. Cube potatoes and thaw broccoli if needed and spread out on sheet. Pour reserved marinade over veggies. Place chicken on top of veggies and bake at 400 degrees for 35 minutes. Voila! Serves 4.
